F R U I T C A K E
I love baking on a rainy day. This is an old Delia recipe that I have tweaked, slightly. Not necessarily for the better, considering I've never made this cake before. I'm just picky about dried fruit and we had no margarine, so I used butter. You will need:
350g of mixed fruit (I used raisins and stem ginger)
110g of butter (or margarine)
110g brown sugar (soft dark)
150ml of water
225g of self-raising flour
2 eggs
Mix the first four ingredients in a saucepan, warm through, simmer for 20 minutes. Remove from heat and leave to cool. Then, add the flour and beaten eggs. Stir thoroughly and put in a baking tin (greased and lined with baking paper). Cook in the oven for 2 hours. Cool on a wire rack and it's done!
